Hi! This is Spencer, the bread baker around this house. For todays post I wanted to talk about how I got into bread baking. I began learning about bread at my job here in Salt Lake City. My chef got the idea that we should be making our own bread and began to work out of a very famous bread book called Tartine Bread by Chad Robertson.
Tartine Bread is a comprehensive guide to making a very rustic, but flavorful loaf. I was bitten by the bread bug and checked out the book at our local library. I was happy with my very first loaf, and had soon nailed the basic recipe. I continued to tweak the recipe until the loaf was exactly the way I wanted it. Having fresh baked bread around the house is a real treat and I don't think I'll be able to go back to store bought bread anytime soon.
This is the basic loaf of bread. From there I began to add my own ingredients. My first experiment was to add jalapeños and it was a smashing success. It added a nice subtle spiciness that was perfect. I spent the next few weeks trying new twists to the loaf and had varying degrees of success. However, I have found that adding toasted sesame seeds to the bread added the flavor that Nina and I were looking for. Sesame adds a nuttiness to the bread that seems to enhance pretty much everything that you put with it. Bread baking has become a bit of an obsession for me, but Nina never complains when she comes home to hot fresh bread.
These slices are from a cranberry walnut loaf and the other bread has bits of vegan cheese throughout.And finally, our favorite, the sesame loaf.
